A creamy, stable buttercream frosting that pipes beautifully and tastes perfectly balanced, perfect for cakes, cupcakes, and cookies.

  • 1 1/2 cups unsalted butter, room temperature (about 3 sticks)
  • 4 1/2 to 5 cups powdered sugar, sifted
  • 1/4 teaspoon fine salt, or to taste
  • 4 teaspoons vanilla extract
  • 34 tablespoons heavy cream or whole milk

Instructions

  1. Remove butter from the fridge at least 1 hour before using to ensure it is room temperature.
  2. Sift the powdered sugar into a large bowl to remove lumps.
  3. In a stand mixer, beat the butter on high speed for 5 minutes until light and fluffy.
  4. Reduce speed to medium-low, add sifted powdered sugar one tablespoon at a time, letting it incorporate completely.
  5. Add 1/4 teaspoon fine salt and 4 teaspoons vanilla extract, beat until fully combined.
  6. Add 3 tablespoons heavy cream, one tablespoon at a time, adjusting for desired consistency.
  7. Beat on medium-high for 1 minute until whipped and glossy, tasting and adjusting as needed.
