1 package of puff pastry (about 450g)
1 cup (240 ml) fresh strawberries
1 cup (240 g) cream cheese
1/2 cup (100 g) granulated sugar
1 tsp vanilla extract (or use 1/2 tsp of almond extract for a unique twist)
1 egg
1 tbsp cornstarch
Powdered sugar for dusting
Instructions
Combine softened cream cheese and sugar in a bowl until smooth and creamy.
Gently fold in diced strawberries and cornstarch into the cream cheese mixture.
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out thawed puff pastry to 1/8 inch thick on a floured surface.
Cut the pastry into 4×4 inch squares and place filling in the center of each.
Fold the pastry over to form triangles and press edges together firmly.
