  • 1 large head of green cabbage
  • 1 large onion
  • 2 tbsp (30 ml) vegetable oil
  • 4 cups (960 ml) vegetable broth
  • 1 tsp (5 g) garlic powder
  • 1 tsp (5 g) onion powder
  • Salt and pepper to taste
  • 1 tbsp (15 ml) apple juice vinegar
  • 1 tbsp (15 g) sugar

Instructions

  1. Select a large, fresh head of cabbage and remove the outer leaves.
  2. Slice the cabbage into quarters and cut out the core.
  3. Chop the quarters into bite-sized pieces and rinse under cold water.
  4. Drain the chopped cabbage in a colander until dry.
  5. Heat vegetable oil in a large pot over medium heat.
  6. Add diced onion to the pot and sauté until translucent, about 5-7 minutes.
  7. Optional: Add minced garlic and sauté for an additional minute until fragrant.
  8. Stir in the chopped cabbage and pour in the vegetable broth.
  9. Sprinkle in garlic powder, onion powder, salt, pepper, and optional vinegar and sugar.
  10. Bring to a gentle boil, then reduce heat and cover the pot to simmer for 30-45 minutes.
  11. Taste and adjust seasonings as needed before serving warm.
  12. Ladle into bowls, garnish, and enjoy with cornbread or rice.
