Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch or similar baking dish with butter or nonstick spray.
  2. In a large bowl, combine sliced bananas, 1 cup sugar, melted butter, vanilla, cinnamon, and salt. Stir gently and let sit to draw out juices.
  3. In another bowl, whisk together self-rising flour, milk, ½ cup sugar, and optional nutmeg until just combined.
  4. Pour batter evenly into the prepared dish without stirring.
  5. Spoon banana mixture over the batter, distributing evenly without mixing.
  6. Bake for 45–50 minutes, until golden-brown and bubbly. The center should spring back when touched.
