Roasted Sweet Potato Rounds with Honey Feta are a stunning fall dinner side made with caramelized roasted sweet potatoes, creamy whipped feta, and a warm drizzle of honey.

Ingredients

  • 2 large sweet potatoes, peeled and sliced into ½-inch rounds
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: pinch of smoked paprika or cinnamon
  • 6 oz block feta cheese
  • 2 oz cream cheese, softened
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 12 tbsp milk or water, as needed
  • 2 tbsp honey, warmed
  • Fresh thyme or rosemary (garnish)
  • Chopped pistachios or walnuts (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  2. Toss sweet potato slices with olive oil, salt, pepper, and optional spices.
  3. Arrange in a single layer and roast 25–30 minutes, flipping halfway, until caramelized and tender.
  4. Blend feta, cream cheese, lemon juice, olive oil, and a splash of milk/water until smooth and creamy.
  5. Heat honey gently in microwave (10–15 seconds) until pourable.
  6. Add a dollop of whipped feta to each sweet potato round. Drizzle with warm honey.
  7. Garnish with thyme/rosemary and optional pistachios or walnuts. Serve warm or at room temperature.
