2 large sweet potatoes, peeled and sliced into ½-inch rounds
2 tbsp olive oil
Salt and pepper, to taste
Optional: pinch of smoked paprika or cinnamon
6 oz block feta cheese
2 oz cream cheese, softened
1 tbsp lemon juice
1 tbsp olive oil
1–2 tbsp milk or water, as needed
2 tbsp honey, warmed
Fresh thyme or rosemary (garnish)
Chopped pistachios or walnuts (optional)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Toss sweet potato slices with olive oil, salt, pepper, and optional spices.
Arrange in a single layer and roast 25–30 minutes, flipping halfway, until caramelized and tender.
Blend feta, cream cheese, lemon juice, olive oil, and a splash of milk/water until smooth and creamy.
Heat honey gently in microwave (10–15 seconds) until pourable.
Add a dollop of whipped feta to each sweet potato round. Drizzle with warm honey.
Garnish with thyme/rosemary and optional pistachios or walnuts. Serve warm or at room temperature.
