- 2 lbs (900 g) carrots, peeled and chopped
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 4 cups (950 ml) vegetable or chicken broth
- 1 cup (240 ml) coconut milk or cream (optional)
- 1 teaspoon cumin or curry powder (optional)
- Salt and pepper, to taste
- Fresh parsley or cilantro, for garnish
- Optional additions: roasted red peppers, chili flakes, or lemon juice
- Preheat oven to 400°F (200°C). Toss chopped carrots with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast carrots for 25–30 minutes until tender and caramelized.
- In a large pot, sauté onion, garlic, and ginger until fragrant.
- Add roasted carrots to the pot along with broth. Simmer for 10 minutes.
