  • 12 tablespoons hot honey (plus extra for serving)
  • ¼ teaspoon sea salt (or to taste)
  • Freshly ground black pepper (to taste)
  • Fresh thyme or rosemary sprigs (for garnish)
  • Crushed red pepper flakes (optional)
  • Toasted nuts (like almonds or pistachios), roughly chopped
  • Sliced baguette or crackers (for serving)

Instructions

  1. Prep your ingredients: remove ricotta from the fridge 10–15 minutes before starting so it relaxes. Chop nuts and herbs; have your hot honey and olive oil ready.
  2. Whip the ricotta: place the whole-milk ricotta in a bowl and add 2 tablespoons olive oil. Whip until glossy and spreadable (30–60 seconds).
  3. Add the hot honey: fold in 1 tablespoon hot honey and taste. Adjust seasoning with salt and pepper.
  4. Plate and garnish: spoon the whipped ricotta into a serving dish, drizzle with olive oil and hot honey, scatter nuts, herbs, and crushed red pepper flakes.
