1 ½ cups whole-milk ricotta cheese
2 tablespoons olive oil (plus extra for drizzling)
1–2 tablespoons hot honey (plus extra for serving)
¼ teaspoon sea salt (or to taste)
Freshly ground black pepper (to taste)
Fresh thyme or rosemary sprigs (for garnish)
Crushed red pepper flakes (optional)
Toasted nuts (like almonds or pistachios), roughly chopped

Instructions
Prep your ingredients: remove ricotta from the fridge 10–15 minutes before starting so it relaxes. Chop nuts and herbs; have your hot honey and olive oil ready.
Whip the ricotta: place the whole-milk ricotta in a bowl and add 2 tablespoons olive oil. Whip until glossy and spreadable (30–60 seconds).
Add the hot honey: fold in 1 tablespoon hot honey and taste. Adjust seasoning with salt and pepper.
Plate and garnish: spoon the whipped ricotta into a serving dish, drizzle with olive oil and hot honey, scatter nuts, herbs, and crushed red pepper flakes.
Serve and enjoy: offer with sliced baguette or crackers at room temperature.
