The Reuben Sandwich is a classic deli favorite made with corned beef, tangy sauerkraut, melted Swiss cheese, and creamy dressing grilled between slices of rye bread. It’s hearty, flavorful, and perfect for lunch or dinner.

Ingredients

  • 8 slices rye bread
  • 1 pound thinly sliced corned beef
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, well drained
  • 1/2 cup Russian dressing or Thousand Island dressing
  • 4 tablespoons unsalted butter, softened

Instructions

  1. Lay out the rye bread slices on a work surface.
  2. Spread dressing evenly on one side of each slice of bread.
  3. Place Swiss cheese on the dressed side of four slices of bread.
  4. Layer corned beef evenly over the cheese.
  5. Top with drained sauerkraut and another slice of Swiss cheese.
  6. Close sandwiches with remaining bread slices, dressing side in.
  7. Butter the outside of each sandwich evenly.
  8. Heat a skillet or griddle over medium heat.
  9. Cook sandwiches until golden brown and cheese is melted, flipping once.
  10. Remove from heat, rest briefly, slice, and serve.
