  • Cubes from 1 loaf of rye bread
  • 1 pound sliced corned beef, roughly chopped
  • 1 cup drained sauerkraut
  • 1 cup shredded Swiss cheese
  • 1 cup Thousand Island dressing
  • 4 large eggs
  • 1 cup milk (whole or 2%)
  • 1 teaspoon caraway seeds
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Cooking spray or butter, for greasing the baking dish

Instructions

  1. Preheat the oven. Set your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it with cooking spray or butter to prevent sticking.
  2. Combine the bread and fillings. In a large mixing bowl, add the rye bread cubes, roughly chopped corned beef, drained sauerkraut, and shredded Swiss cheese. Toss gently to ensure everything is evenly distributed.
  3. Prepare the custard mixture. In a separate bowl, whisk together the Thousand Island dressing, eggs, milk, caraway seeds, salt, and pepper until smooth and well combined.
  4. Mix the custard with the bread. Pour the egg mixture over the bread mixture. Stir gently to coat all the bread cubes evenly. Let it sit for about 10 minutes, allowing the bread to soak up some of the liquid.
  5. Transfer to baking dish. Carefully transfer the soaked mixture to the prepared baking dish, spreading it out into an even layer. Gently press down to compact it slightly.
  6. Bake the casserole. Place the baking dish in the preheated oven and bake for 45 to 50 minutes, or until the top is golden brown, the cheese is melted, and the center is set. A knife inserted in the center should come out mostly clean.
  7. Cool and serve. Once baked, remove the casserole from the oven and let it cool for about 5 to 10 minutes. Cut into squares and serve warm.
