A cozy, creamy, and spicy butter chicken recipe that comes together quickly, perfect for busy weeknights.

  • 1 ½ pounds skinless boneless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon garam masala
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread (for serving)
  • Steamed rice (for serving)

Instructions

  1. In a mixing bowl, combine chicken thighs, salt, garlic powder, paprika, curry powder, and Greek yogurt. Toss together and marinate in the fridge for at least 30 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat. Add marinated chicken (discard marinade) and cook until golden brown, about 5-7 minutes.
  3. Remove chicken from the skillet. Add 3 tablespoons of butter, garlic, and onion; sauté until onions are translucent, about 4-5 minutes.
  4. Stir in tomato sauce, sugar, salt, and black pepper. Let it simmer for a few minutes.
  5. Return the chicken to the pan, add heavy cream, cayenne pepper, and garam masala. Simmer for about 10 minutes.
  6. Add the last tablespoon of butter until melted and creamy.
  7. Serve over rice or with naan, garnished with parsley.
