Quick Cherry Pie Bites are flaky, bite-sized mini desserts filled with sweet-tart cherry filling. Made with refrigerated pie crust or puff pastry, they’re fast, easy, and perfect for parties, brunch, or a simple homemade treat.

  • 1 package refrigerated pie crust (or 1 sheet puff pastry, thawed)
  • 1 1/2 cups cherry pie filling
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon granulated sugar (optional, for topping)
  • Optional glaze: 1/2 cup powdered sugar + 1–2 tablespoons milk

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin or line a baking sheet with parchment paper.
  2. Roll out the pie crust or puff pastry on a lightly floured surface and cut into 3-inch circles or squares.
  3. Press dough pieces into mini muffin cups or place on prepared baking sheet for hand-pie style.
  4. Spoon about 1 tablespoon of cherry filling into the center of each piece, avoiding overfilling.
  5. If making hand pies, fold dough over filling and press edges with a fork to seal.
  6. Whisk egg and water together to make an egg wash, then brush lightly over the tops.
  7. Sprinkle with granulated sugar if desired.
  8. Bake for 18–22 minutes or until golden brown and flaky.
  9. Allow to cool for 10–15 minutes before serving. Drizzle with glaze if desired.
