Sweet and Fancy Pop Tart Cookie Bars Everyone Will Love

  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (90g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup strawberry or raspberry jam (or flavor of choice)
  • 1 cup (120g) powdered sugar
  • 2 tablespoons milk (more as needed)
  • 1/2 teaspoon vanilla extract
  • Rainbow sprinkles, for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream together softened butter and powdered sugar until light and fluffy. Add vanilla extract. Stir in flour and salt until a dough forms.
  3. Press two-thirds of the dough into the pan. Spread jam evenly over the dough, leaving a small border. Crumble the remaining dough over the jam.
  4. Bake for 28–32 minutes until golden. Let cool completely in the pan.
  5. Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled bars and top with rainbow sprinkles.
  6. Once the glaze has set, slice into squares and serve.
