  • 16 oz dry penne pasta
  • 8 oz Italian sausage, sliced
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 small red onion, chopped
  • 4 oz baby bella mushrooms, sliced
  • 1/4 cup black olives, sliced
  • 24 oz marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 cups shredded mozzarella cheese
  • 4 oz pepperoni slices
  • Salt (for pasta water)
  • Cooking spray

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch casserole dish.
  2. Cook pasta in salted boiling water until al dente. Drain and set aside.
  3. Brown sausage in a skillet over medium heat. Drain excess grease.
  4. In a large bowl, mix marinara sauce, Parmesan cheese, garlic powder, basil, and oregano.
  5. Add cooked pasta, sausage, bell peppers, mushrooms, olives, and onions to the sauce mixture. Toss to combine.
  6. Transfer the mixture to the prepared casserole dish.
  7. Top with mozzarella cheese and pepperoni slices.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and broil on high for 2-3 minutes until cheese is melted and golden.
  10. Let the pizza casserole cool for 10 minutes before serving.
