A vibrant salad of sweet pineapple and tart kiwi, perfect for a refreshing side or a light dessert.

  • 3 cups fresh pineapple, diced (about 1 small pineapple)
  • 3 medium kiwis, peeled and sliced or diced
  • 1 tbsp fresh lime juice (about 1 lime)
  • 12 tsp honey or agave
  • 2 tbsp chopped fresh mint (or basil)
  • Pinch of flaky sea salt
  • Optional: 1 tbsp shredded coconut or a pinch of chili flakes

Instructions

  1. Prepare fruit: Trim and dice the pineapple into bite-sized pieces. Peel kiwis and cut to similar size.
  2. Make dressing: In a small bowl, whisk lime juice with honey (or agave) and a pinch of salt until smooth.
  3. Combine: In a mixing bowl, gently fold pineapple, kiwi, and chopped mint. Pour dressing over fruit and toss lightly.
  4. Rest: Chill for 10–15 minutes to let flavors merge.
  5. Finish: Sprinkle optional coconut or chili flakes just before serving.
