Pineapple Chicken and Rice is a sweet and savory tropical-inspired dish made with tender chicken, juicy pineapple, and fluffy rice coated in a flavorful homemade sauce.

  • 1½ pounds boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1½ cups long-grain white or jasmine rice
  • 3 cups water (for cooking rice)
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ½ cup pineapple juice
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. Rinse the rice under cold water until clear. Cook with 3 cups of water according to package instructions. Fluff and set aside.
  2. Heat oil in a large skillet over medium-high heat.
  3. Season chicken lightly with salt and pepper, then cook in a single layer for 4–6 minutes until golden and fully cooked (internal temperature 165°F). Remove and set aside.
  4. In the same skillet, sauté garlic and ginger for 30 seconds until fragrant.
  5. Add pineapple chunks, pineapple juice, soy sauce, and brown sugar. Simmer for 3–4 minutes.
  6. Mix cornstarch with 2 tablespoons water and stir into the skillet. Cook until sauce thickens.
  7. Return chicken to the skillet and toss to coat evenly in the sauce. Simmer 3–5 minutes.
  8. Serve pineapple chicken over cooked rice and garnish as desired.
