  • 1 cup fresh or canned peaches, diced

  • ½ cup unsalted butter
  • 1 cup packed brown sugar
  • ¼ cup milk
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar until light and fluffy (about 2–3 minutes).
  4. Add eggs one at a time, beating after each addition, then mix in vanilla.
  5. Stir in sour cream until combined.
  6. Gradually fold dry ingredients into wet ingredients until just combined. Do not overmix.
  7. Gently fold in diced peaches.
  8. Pour batter into prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick comes out clean. Let cool completely.
  9. In a small saucepan, melt butter over medium heat. Stir in brown sugar and cook until smooth (2–3 minutes).
