Combine juice and sugar: In a medium saucepan, combine 1 cup of freshly squeezed orange juice with 1 and 3/4 cups of sugar. Add a few tablespoons of butter to enhance the flavor and texture. Stir the mixture well until the sugar begins to dissolve.
Cook until thick: Place the saucepan over medium heat. Continue to stir as the mixture heats up, watching closely for it to reach a candy-like consistency. This may take some time, so be patient and keep stirring to prevent burning.
Check the consistency: Use a candy thermometer to monitor the temperature. You’re looking for a soft ball stage, around 240°F. The mixture should be thick and glossy at this point.
Pour into a mold: Once the desired consistency is reached, carefully pour the mixture into your prepared mold or baking dish. Spread it evenly and let it cool at room temperature until set.
Cut and coat: After the candy has cooled and hardened, remove it from the mold. Use a knife or pizza cutter to cut it into small, bite-sized pieces. Coat each piece in the additional 1 and 1/4 cups of sugar to give it a sweet crunch and prevent sticking.
