One-Pot Chili Mac is a hearty and cheesy comfort food made with ground beef, beans, pasta, and bold spices all cooked together in one pot.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 2 cups elbow macaroni (uncooked)
  • 1 1/2 cups shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  2. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
  3. Add chili powder, cumin, paprika, salt, and pepper. Stir well to coat the meat evenly.
  4. Pour in diced tomatoes, tomato sauce, kidney beans, and beef broth. Stir to combine and bring to a gentle simmer.
  5. Add uncooked elbow macaroni directly into the pot. Stir well so the pasta is submerged in liquid.
  6. Cover and simmer on medium-low heat for 10–12 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
  7. Remove from heat and stir in shredded cheddar cheese until melted and creamy.
  8. Taste and adjust seasoning if needed. Serve warm.
