Quick One Pot Beef Stroganoff Noodles is a creamy and hearty comfort meal made with tender beef, mushrooms, and egg noodles simmered together in one pot. This easy weeknight dinner delivers rich flavor with minimal cleanup.

  • 1 lb beef sirloin, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups beef broth
  • 8 oz wide egg noodles
  • 1 cup milk or light cream
  • 1/2 cup sour cream
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the sliced beef with salt and black pepper.
  2. Heat olive oil in a large pot over medium-high heat. Sear the beef in batches until browned. Remove and set aside.
  3. In the same pot, sauté diced onion for 3–4 minutes until softened. Add garlic and cook for 30 seconds.
  4. Add sliced mushrooms and cook for about 5 minutes until tender and lightly browned.
  5. Stir in paprika and Worcestershire sauce, mixing well.
  6. Pour in beef broth and bring to a gentle simmer, scraping up browned bits from the bottom.
  7. Add egg noodles directly to the pot. Stir and simmer on medium-low heat for 10–12 minutes until noodles are tender.
  8. Reduce heat to low and stir in milk or light cream.
  9. Gently fold in sour cream, then return the beef to the pot. Simmer for 3–5 minutes until heated through.
  10. Garnish with fresh parsley and serve warm.

Notes

  • This recipe can be made with ground beef for a quicker option.
  • Feel free to add more vegetables like peas or carrots.
