Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 1/4 cup chopped fresh parsley for garnish

Instructions

  1. In a bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, soy sauce, smoked paprika, and garlic powder to create the maple mustard marinade.
  2. Place chicken in a resealable bag or shallow dish. Pour half of the maple mustard marinade over the chicken, ensuring it is well coated. Reserve the remaining marinade for basting.
  3. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Preheat your grill or oven to 400°F (200°C).
  5. If grilling, grill the chicken for 6-8 minutes per side, basting with the reserved marinade during the last few minutes of cooking, until cooked through and internal temperature reaches 165°F (74°C).
  6. If baking, place the marinated chicken on a baking sheet. Bake for 20-25 minutes, basting with the reserved marinade halfway through, until cooked through and internal temperature reaches 165°F (74°C).
  7. Let the Oktoberfest Maple Mustard Chicken rest for 5 minutes before serving.
  8. Garnish with fresh parsley if desired.
