A quick and flavorful side dish featuring fluffy rice infused with spices and diced tomatoes, perfect for taco night or family meals.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Sauté chopped onion and minced garlic until softened and fragrant, about 3-4 minutes.
  2. Add the rice and cook for an additional 2 minutes until lightly toasted.
  3. Stir in diced tomatoes (with juice), broth, cumin, chili powder, and a pinch of salt. Mix to combine.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
  5. Fluff the rice with a fork and garnish with fresh cilantro before serving.
