2 tablespoons olive oil
2 boneless, skinless chicken breasts
1 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped sun-dried tomatoes (packed in oil, drained)
3/4 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 teaspoon dried oregano
8 ounces pasta (such as penne or fettuccine)
Fresh basil leaves, for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Season chicken breasts with 1/2 teaspoon salt and black pepper. Add to skillet and cook for 5-6 minutes per side, until golden and cooked through. Remove and set aside.
In the same skillet, add garlic and red pepper flakes; cook for 30 seconds until fragrant.
Add sun-dried tomatoes and cook for another 1-2 minutes.
Pour in heavy cream and chicken broth, stir to combine.
Add Parmesan cheese, oregano, and remaining 1/2 teaspoon salt. Simmer the sauce for 3-4 minutes until slightly thickened.
Meanwhile, cook pasta according to package instructions. Drain and set aside.
Slice the cooked chicken and return it to the skillet.
Add cooked pasta to the skillet and toss everything to coat well with the sauce.
Garnish with fresh basil leaves if desired and serve hot.
