  • 1 to 2 hearts of romaine lettuce
  • 1 bundle red leaf lettuce
  • 2 shallots, thinly sliced
  • 2 lemons, zested and juiced
  • 1/4 cup extra virgin olive oil
  • Kosher salt, to taste
  • Black pepper, to taste
  • Crushed red pepper flakes or Aleppo pepper, to taste (optional)
  • 1 cup finely grated Parmesan cheese

Instructions

  1. Chop the romaine and red leaf lettuces into bite-sized pieces.
  2. Rinse the chopped lettuces thoroughly and drain well. Pat dry with paper towels; for extra crispness, chill wrapped in paper towels for 10–15 minutes.
  3. In a large bowl, combine the dried lettuce, thinly sliced shallots, and lemon zest.
  4. Sprinkle kosher salt and black pepper over the salad. Squeeze in the lemon juice and drizzle with olive oil.
  5. Toss gently but thoroughly to coat each leaf with dressing. Adjust salt, pepper, or lemon to taste.
  6. Sprinkle finely grated Parmesan over the salad and toss again to incorporate cheese.
  7. Transfer to a serving dish and enjoy immediately.
