½ box (16 ounces) shredded phyllo dough, thawed
½ cup unsalted butter, melted
2 cups shredded mozzarella cheese
½ cup ricotta cheese
Crushed pistachios (optional, for garnishing)
1 cup granulated sugar
¾ cup water
1 tablespoon lemon juice (or a thin slice of lemon)
1 teaspoon rose water (optional)
3 cups whole milk
3 tablespoons cream of wheat or fine semolina flour
3 tablespoons sugar
Instructions
Make the Syrup: Combine sugar and water in a small saucepan over medium-high heat. Stir well until it boils. Add lemon juice, lower the heat, and simmer for 10 minutes. Remove from heat, stir in rose water, and let it cool.
Prepare the Phyllo Dough: In a food processor, finely shred the phyllo dough into vermicelli-sized pieces. Combine with melted butter in a bowl until fully coated.
Cook the Filling: In a non-stick pan over medium heat, mix milk, cream of wheat, and sugar, whisking constantly for about 10 minutes until thick and boiling.
Preheat the Oven: Set the oven to 370°F (190°C) and prepare a 9-inch springform pan with baking spray.
Layer the Knafeh: Place the buttered phyllo dough in the bottom of the prepared pan, pressing down evenly. Add a layer of shredded mozzarella followed by the knafeh mixture.
Bake: Cook in the preheated oven for about 40 minutes, until the edges become golden brown.
Flip and Serve: Allow the pan to cool slightly. Flip the Knafeh onto a serving plate to reveal the crispy top. Drizzle with the cooled syrup and garnish with crushed pistachios if desired.
