  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 parsnip, diced
  • 2 cloves garlic, minced
  • 1 cup green lentils, rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the carrots, potatoes, and parsnip; cook for 5 minutes until softened.
  4. Add the minced garlic and cook for another minute until aromatic.
  5. Stir in the green lentils, vegetable broth, thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes until the lentils and vegetables are tender.
  7. Adjust seasoning to taste.
  8. Serve warm, garnished with fresh parsley.
