  • 4 tablespoons unsalted butter OR 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half for extra richness)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, freshly shredded
  • Cooked crumbled bacon (optional, for garnish)
  • Extra shredded cheddar cheese (optional, for garnish)
  • Sour cream or Greek yogurt (optional, for garnish)
  • Fresh chives or parsley, chopped (for garnish)
  • Croutons (for added crunch)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper, freshly ground (or to taste)
  • Pinch of cayenne pepper or smoked paprika (optional)

Instructions

  1. Peel and cube the Yukon Gold potatoes into uniform ½-inch pieces and rinse them under cold water to wash away excess starch.
  2. In a large pot or Dutch oven over medium heat, melt the butter (or olive oil and butter mix) and sauté the chopped onion for 5-7 minutes until soft.
  3. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Sprinkle the flour over the mixture and stir continuously for about 1-2 minutes.
  5. Gradually whisk in the broth, scraping the bottom to loosen any browned bits, and bring to a simmer.
  6. Add the potato cubes, stir, and cover, letting it simmer for 15-20 minutes until the potatoes are tender.
  7. Carefully blend half the soup until smooth and creamy, then return it to the pot.
  8. Reduce heat to low and stir in the whole milk (or half-and-half) and heavy cream; heat through for about 5 minutes without boiling.
  9. Remove from heat and gradually mix in the cheddar cheese until melted and smooth.
  10. Season the soup with salt, black pepper, and cayenne or paprika as desired.
  11. Ladle into bowls and top with optional garnishes like bacon, extra cheese, sour cream, chives, or croutons before serving.
