A comforting and delicious fusion of a classic grilled cheese and a hearty burrito, featuring a blend of melted cheeses wrapped in a crispy, golden-brown tortilla.

  • 8 large flour tortillas (burrito size)
  • 1 pound sharp cheddar cheese, shredded
  • 1/2 pound Monterey Jack cheese, shredded
  • 1/4 pound pepper jack cheese, shredded
  • 1 tablespoon butter, softened
  • 1/4 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • Optional additions: thinly sliced ham, bacon, caramelized onions, roasted red peppers, jalapeños

Instructions

  1. In a large bowl, combine the shredded cheddar, Monterey Jack, and pepper jack cheeses.
  2. Add the softened butter, mayonnaise, mustard, garlic powder, onion powder, and paprika to the cheese mixture.
  3. Season generously with salt and freshly ground black pepper. Taste and adjust seasoning as needed.
  4. Gently toss everything together until the cheese is evenly coated with the butter and spice mixture.
  5. Lay a flour tortilla flat on a clean work surface.
  6. Spread about 1/4 cup of the cheese mixture evenly across the center of the tortilla, leaving about an inch of space at the edges.
  7. If using optional additions, add them on top of the cheese mixture now.
  8. Carefully fold the sides of the tortilla inward, then fold the bottom edge up and over the filling.
  9. Tightly roll the burrito from the bottom to the top, tucking in the edges as you go.
  10. Repeat steps 5-9 with the remaining tortillas and cheese mixture.
  11. Heat a large skillet or griddle over medium heat.
  12. Lightly brush the outside of each burrito with a little extra butter or oil.
  13. Place the burritos seam-down in the hot skillet.
  14. Cook for about 3-4 minutes per side, or until the tortillas are golden brown and crispy and the cheese is melted and gooey inside.
  15. Gently press down on them with a spatula to ensure even cooking and to help the cheese melt completely.
  16. Work in batches if necessary to avoid overcrowding the pan.
  17. Once cooked, remove the burritos from the skillet and place them on a wire rack to cool slightly before serving.

  • Do not overmix the cheese mixture to prevent stringiness.
