  • 2 cups fresh mulberries (washed and dried)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk or plain yogurt
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon flour (for tossing mulberries)
  • Optional: 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
  2. Rinse mulberries gently, remove stems, pat dry, and toss with 1 tablespoon flour.
  3. In a large bowl, cream softened butter and sugar until light and fluffy (about 2–3 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually add dry ingredients to the butter mixture, alternating with milk or yogurt. Begin and end with dry ingredients. Mix until just combined.
  7. Gently fold in the floured mulberries (and lemon zest if using) without overmixing.
  8. Pour batter evenly into the prepared pan.
  9. Bake for 40–50 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before serving.
