  • 4 cups bread flour (or all-purpose flour)
  • 2 teaspoons instant yeast
  • 1 tablespoon salt
  • 2 tablespoons olive oil, plus extra for the pan and drizzling
  • 2 cups warm water (about 100–110°F / 38–43°C)
  • Fresh rosemary for topping
  • Coarse sea salt for sprinkling

Instructions

  1. In a large bowl, whisk together the bread flour, instant yeast, and salt.
  2. Pour in the warm water and 2 tablespoons olive oil. Stir until a sticky, shaggy dough forms.
  3. Cover the bowl with a damp cloth or plastic wrap. Let rise in a warm spot for about 2 hours, or until doubled.
  4. Preheat the oven to 425°F (220°C).
  5. Generously oil a baking sheet. Transfer the dough onto the sheet and gently stretch it to fit with oiled hands—don’t overwork it.
  6. Press your fingers into the dough to create deep dimples across the surface.
  7. Drizzle more olive oil over the top, then scatter fresh rosemary and a pinch of coarse sea salt.
  8. Bake for 20–25 minutes, until the top is golden brown and the bottom sounds hollow when tapped.
  9. Remove from the oven and cool slightly before slicing and serving.
