  • 6 Bell Peppers
  • 1 lb Ground Beef or Ground Turkey
  • 2 ¼ cups Uncooked White Rice, Cooked
  • 15 oz can Diced Tomatoes
  • 8 oz can Tomato Sauce
  • ¾ cup Finely Chopped Yellow Onion
  • 2 teaspoons Olive Oil
  • 1 cup Shredded Cheddar Cheese (¼ cup set aside for topping)
  • 2 teaspoons Italian Seasoning
  • 1 ½ teaspoons Minced Garlic
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions

  1. Preheat oven to 375°F (190°C) and prepare the bell peppers by slicing the tops off and removing seeds.
  2. In a large skillet over medium heat, warm olive oil and brown the ground meat for about 5-7 minutes.
  3. Add onion, garlic, garlic powder, salt, pepper, and Italian seasoning to the skillet; cook for 2-3 minutes.
  4. Mix in cooked rice, diced tomatoes, and tomato sauce; let simmer for 5-7 minutes.
  5. Stuff each bell pepper with the mixture, packing tightly, and place upright in a baking dish.
  6. Top with shredded cheddar cheese and cover with foil. Bake for 25 minutes.
  7. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  8. Serve hot, garnished with extra cheese if desired.
