  • 1 lb gnocchi (potato gnocchi recommended)
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 10 oz fresh spinach, roughly chopped
  • 4 oz feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth (or vegetable broth)
  • 2 tbsp butter
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley, for garnish (optional)

Instructions

  1. Boil a large pot of salted water. Add gnocchi in batches and cook according to package directions, until they float to the surface.
  2. Remove gnocchi with a slotted spoon and place on a clean kitchen towel or parchment-lined baking sheet to absorb excess moisture.
  3. Toss the cooked gnocchi gently with 1 tbsp olive oil.
  4. Melt butter in a large skillet over medium heat. Add onion and cook until softened, about 5-7 minutes.
  5. Add garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.
  6. Add spinach and cook until wilted, about 3-5 minutes.
  7. Stir in heavy cream and chicken broth. Bring to a gentle simmer and cook until slightly thickened, about 2-3 minutes.
  8. Reduce heat, stir in feta cheese and half the Parmesan cheese until melted and creamy. Season with salt and pepper.
  9. Add the prepared gnocchi to the skillet and toss gently to coat.
  10. Cook for 2-3 minutes until the gnocchi are slightly crispy.
  11. Remove from heat, stir in the remaining Parmesan cheese.
  12. Garnish with fresh parsley (optional) and serve immediately.

  • For extra crispy gnocchi, you can broil them briefly after pan-frying, watching carefully to prevent burning.
