  • 1 lb beef (flank steak or sirloin), thinly sliced
  • 1/2 cup cornstarch (or potato/tapioca starch)
  • 1/4 cup vegetable oil (or peanut/canola oil)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce (use tamari for gluten-free)
  • 2 tablespoons honey (or maple syrup for vegan)
  • 1 tablespoon sriracha (or other hot sauce, to taste)
  • 1 tablespoon rice vinegar
  • 1/4 cup green onions, chopped
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. Pat the beef dry with paper towels and cut into thin slices across the grain.
  2. Toss the beef strips in cornstarch and let rest for 15 minutes.
  3. Heat oil in a large frying pan over medium-high heat.
  4. Fry batches for 3–4 minutes each until golden and crisp; transfer to paper towels to drain.
  5. In a clean pan, combine garlic, ginger, soy sauce, honey, sriracha, and rice vinegar. Simmer for 1–2 minutes.
  6. Add cornstarch mixed with water for a thicker glaze if desired.
  7. Return beef to the pan and toss to coat in the sauce. Serve immediately with green onions and sesame seeds.
