A creamy one-pot broccoli cheddar orzo that’s quick, satisfying, and perfect for weeknight dinners or lunches. Minimal cleanup and maximum flavor!

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese (sharp cheddar preferred)
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: freshly ground black pepper and extra cheddar for garnish

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the diced onion and sauté for 3–4 minutes until translucent and soft.
  2. Stir in the minced garlic and 1/2 teaspoon garlic powder. Cook for 1 minute until fragrant.
  3. Add the orzo and stir constantly for 1–2 minutes to toast the pasta lightly.
  4. Pour in the broth and bring to a boil. Reduce heat to a simmer.
  5. Add the broccoli florets, cover, and cook for 8–10 minutes, stirring occasionally, until the orzo is tender.
  6. Remove from heat and stir in heavy cream and shredded cheddar until smooth and creamy.
  7. Season with salt and pepper to taste. Serve warm, garnished with extra cheddar and freshly ground black pepper if desired.
