Ingredients

Scale
  • 8 ounces (225 g) spaghetti or fettuccine
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, finely minced
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups (360 ml) milk or half-and-half
  • 1/2 cup (120 ml) heavy cream
  • 1/2 cup (50 g) grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. In a skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in flour, cooking for 30 seconds to form a smooth paste.
  4. Slowly whisk in milk and cream. Stir until sauce thickens slightly.
  5. Mix in Parmesan, salt, and pepper until melted and smooth.
  6. Toss pasta in the sauce, adding reserved pasta water if needed.
  7. Garnish with parsley and serve warm.

Notes

  • Use freshly minced garlic for the best flavor.
  • Reserve pasta water to help bind sauce and pasta.
  • Grate Parmesan yourself for creamier results.
  • Serve immediately for the creamiest texture.
  • Customize with chicken, shrimp, or roasted veggies.
