1/2 cup unsalted butter, softened
1 cup cranberries, fresh or thawed from frozen
2–3 tablespoons honey
1 teaspoon orange zest
1/2 teaspoon vanilla extract
Pinch of salt
1/4 teaspoon ground cinnamon or allspice
1–2 teaspoons orange juice
Instructions
Place a small saucepan over medium heat and add the cranberries with a splash of water. Cook gently until the berries burst, about 5–6 minutes.
Stir in honey, orange zest, and vanilla extract. Simmer for another 2–3 minutes.
Remove the cranberry mixture from heat and mash to your preferred texture.
In a separate bowl, whip the softened butter until pale and fluffy.
Fold the warm cranberry mixture into the whipped butter until fully incorporated.
Season with a pinch of salt and adjust sweetness with more honey or orange juice if desired.
Transfer the mixture to a jar and refrigerate for 30–60 minutes.
Use on toast, biscuits, muffins, or swirl into yogurt or oatmeal.
Notes
This spread can be used as a topping for roasted vegetables or a glaze for holiday meats.
Reserve a few whole cranberries for added texture if preferred.
