- 1 cup whole milk cottage cheese
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup grated cheese (cheddar, Gruyère, Swiss, or mozzarella)
- Optional: up to 1 cup chopped vegetables or cooked meats (spinach, mushrooms, bell pepper, ham, cooked bacon)
- Preheat the oven to 350°F (175°C). Lightly spray or grease a 9-inch baking dish.
- Crack the 6 large eggs into a blender or bowl. Add the cottage cheese, salt, and black pepper. Blend or whisk until mostly smooth and pale.
- Stir in the grated cheese and up to 1 cup of chopped fillings. If using vegetables, sauté them first.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for about 45 minutes, or until the top is lightly golden and the center is set but still slightly jiggly.
