Garlic Potato Soup is a rich, creamy, and deeply comforting soup made with tender potatoes, sautéed garlic, and aromatic herbs. This cozy one-pot recipe is naturally vegetarian, easy to customize for vegan or dairy-free diets, and perfect for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter (or vegan butter)
  • 1 medium onion, chopped
  • 6–8 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 4–5 medium Yukon Gold or Russet potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup water (as needed)
  • Salt and pepper, to taste
  • 1/2 cup cream or full-fat coconut milk (optional)
  • Chopped chives or parsley, for garnish

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onion and cook 3–4 minutes until translucent. Add garlic and cook 1–2 minutes until fragrant.
  2. Stir in garlic powder, thyme, and rosemary. Cook 30 seconds to bloom spices.
  3. Add diced potatoes and stir to coat evenly.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer 20–25 minutes until potatoes are fork-tender.
  5. Use an immersion blender to blend until smooth, or blend partially for a chunky texture.
  6. Stir in cream or coconut milk if using. Season with salt and pepper to taste.
  7. Ladle into bowls and garnish with chives or parsley. Serve hot.

Notes

  • Customize with your favorite herbs.
  • Adjust the thickness by adding more or less liquid.
  • Store leftovers in the refrigerator for up to 3 days.
