- 1 cup cherry puree
- 2 teaspoons powdered gelatin
- 2 cups heavy cream
- 1/4 teaspoon almond extract
- 1/2 cup white chocolate
- 1/4 cup milk
- 1/4 cup water (for blooming gelatin)
- Bloom gelatin by sprinkling it over cold water and letting it sit until spongy. Warm gently until clear, then let it cool.
- Whip heavy cream to soft peaks.
- Gently fold the whipped cream into the cherry puree and almond extract mixture.
- Pour the mousse into silicone dome molds and freeze for at least 3-4 hours or overnight.
- To prepare the glaze, melt white chocolate, milk, and bloomed gelatin together until smooth and warm.

- Remove the domes from the molds and place them on a wire rack.
