  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 pound gnocchi (potato gnocchi recommended)
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened and translucent, about 5-7 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Pour in vegetable broth and undrained diced tomatoes. Stir to combine.
  5. Bring to a simmer, reduce heat to low, and simmer for 15 minutes.
  6. Stir in heavy cream, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  7. Bring a separate pot of salted water to a boil. Add gnocchi and cook according to package directions until they float.
  8. Remove gnocchi with a slotted spoon and add directly to the simmering soup.
  9. Stir gnocchi into the soup and simmer for 2-3 minutes to heat through.
  10. Remove from heat and stir in cheddar and Parmesan cheese until melted.
  11. Adjust consistency with more broth if too thick, or simmer uncovered to reduce if too thin.
  12. Serve immediately, garnished with fresh parsley if desired.
