Preheat your oven to 350°F (175°C). Line a baking sheet with parchment. Slice the baguette into 1/4-inch rounds, brush with olive oil and a pinch of salt, and bake until edges are golden, 8–10 minutes, flipping once.
Meanwhile, heat a heavy skillet over medium heat. Add olive oil and butter. When the butter melts, add the onions and a pinch of salt; stir to coat.
Cook the onions slowly, stirring every few minutes. After about 10 minutes, sprinkle with sugar if using; adjust heat to maintain a gentle sizzle and prevent browning. You want deep amber color and jammy texture.
Deglaze the pan with a splash of balsamic vinegar or wine; scrape up the fond and simmer until the liquid nearly evaporates, leaving a glossy glaze on the onions.
Season to taste with salt and pepper. If using herbs, crumble in thyme or rosemary; cook another minute to mingle flavors.
When crostini are toasted and onions glossy, set out the soft cheese so guests can spread, or serve cheese on the side.
Top each crostini with a generous spoonful of the onion mixture. Finish with balsamic glaze, pepper, and herb leaves if desired.
Arrange on a platter; for make-ahead, keep crostini and onions separate and assemble just before serving for maximum crunch.
