  • 1 large egg (or 1/4 cup applesauce for vegan option)
  • 1 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract (or vanilla bean paste)
  • 2 cups firm diced apples (like Granny Smith, Honeycrisp, or Braeburn)
  • 1 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (can substitute milk in glaze)
  • 12 tbsp water (to adjust glaze consistency)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking pan or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg (if using), sugar, and salt.
  3. In a separate bowl, whisk egg with milk and vanilla, or use applesauce with milk for vegan.
  4. Pour wet ingredients into dry and gently fold until just combined, being careful not to overmix.
  5. Fold in diced apples until evenly distributed.
  6. Spoon batter into prepared pan or fill muffin cups 2/3 full. Smooth tops lightly.
