300 g all-purpose flour
60 g granulated sugar
1 tsp salt
220 g unsalted butter, cold, cut into cubes
110 g water
1 kg apples (Pink Lady, Royal Gala, or Fuji)
75 g unsalted butter
190 g brown sugar
1¼ tsp ground cinnamon
1¼ tbsp cornstarch
¼ tsp salt
2½ tbsp water
5 tbsp almond flour (or other finely ground nuts)
1 egg
1 tbsp cold water
3 tbsp brown sugar (for sprinkling)
Vanilla ice cream (or other preferred flavors)
Instructions
In a large mixing bowl, whisk together flour, granulated sugar, and salt. Add cold, cubed butter and work it into the flour until it resembles coarse crumbs.
Gradually add cold water, mixing with a fork until the dough holds together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 mins.
Peel, core, and slice apples into thin wedges. Sprinkle with brown sugar, cinnamon, cornstarch, and salt, mixing gently. Let sit for 10 mins.
Preheat oven to 220°C (425°F) and grease your pie dish. Roll out the chilled dough to about 3mm thick, covering the bottom and sides of the pie dish.
Pour in the apple filling, dot with bits of unsalted butter, and crimp the edges to seal.
Brush the top with a mixture of beaten egg and cold water, sprinkle with brown sugar, and bake for 45-50 mins until golden brown and bubbling.
