  • 1 1/4 cup frozen or fresh corn
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 2 1/2 cups shredded cooked rotisserie or leftover chicken
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro (plus more for garnish)
  • Tortilla chips or strips, for topping (optional)
  • Sliced avocado, for topping (optional)
  • Shredded Monterey Jack cheese, for topping (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and sauté for 4 minutes. Add minced garlic and sauté for 30 seconds more.
  2. Pour in chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne, salt, and pepper. Stir and bring to a boil. Reduce heat and simmer for 15 minutes to allow flavors to blend.
  3. Set aside 1 cup of the drained beans. Add it to a food processor with 1/4 cup broth and puree until smooth. This is your white chicken chili thickening trick.
  4. Add Neufchatel cheese, remaining whole beans, corn, and the pureed beans to the pot. Stir to combine and simmer for another 10 minutes.
