  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups frozen mixed vegetables (carrots, peas, green beans, corn)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (optional)
  • 1 cup cream of mushroom soup (or homemade white sauce)
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1 cup crushed buttery crackers or breadcrumbs (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Set oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Melt butter in a skillet. Add onion and garlic; cook until fragrant, 3–5 minutes.
  3. Stir in mixed veggies and broccoli. Cook for 5–7 minutes. Season with salt, pepper, and paprika.
  4. In a bowl, combine cream of mushroom soup and sour cream. Stir into the vegetables.
  5. Mix in cheddar and mozzarella until well combined.
  6. Spread mixture evenly into prepared baking dish.
  7. Combine crushed crackers and melted butter, then sprinkle evenly on top.
  8. Cover with foil and bake 25 minutes. Uncover and bake another 10–15 minutes until golden.
  9. Let rest for 5–10 minutes before serving.
