- 3 large eggs
- 1 1/2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1 tablespoon vanilla extract (or seeds from 1 vanilla bean)
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- Pinch of salt
- Preheat oven to 375°F (190°C).
- Line a 9-inch pie dish with pie crust, crimp the edges, and chill.
- Whisk eggs and sugar until smooth. Add milk, cream, vanilla, cinnamon, nutmeg, and salt.
- Pour mixture through a fine-mesh sieve for a smooth custard.
- Place pie dish on a baking sheet and pour custard into crust.
- Bake 35–45 minutes until edges are set but center is slightly jiggly.
- Cool completely, then refrigerate at least 2 hours before slicing.
