Unicorn Cheesecake Bites are colorful, no-bake mini cheesecakes made with cream cheese, funfetti cake mix, and candy melts. They feature a creamy center coated in pastel-colored candy melts and topped with unicorn sprinkles, making them a magical dessert for parties or celebrations.

Ingredients

Scale
  • 1 (15.25 oz) box funfetti strawberry cake mix with candy bits
  • 1 (8 oz) package cream cheese, softened
  • 3 tablespoons unicorn sprinkles (plus extra for topping)
  • 1 cup pink candy melts
  • 1 cup purple candy melts
  • 1 cup blue candy melts
  • 1 cup yellow candy melts

Instructions

  1. Heat-treat the cake mix by microwaving it in two 30-second intervals, stirring between each, then allow it to cool completely.
  2. In a large bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  3. Add the cooled cake mix and 3 tablespoons of sprinkles to the cream cheese mixture. Mix until fully combined.
  4. Cover the mixture tightly and refrigerate for 2 hours to firm up.
  5. Line a baking sheet with parchment paper. Scoop 1-tablespoon portions of the chilled mixture and roll into balls. Place them on the prepared baking sheet.
  6. Divide candy melts by color into separate bowls. Microwave each in 30-second intervals, stirring until smooth.
  7. Dip each cheesecake ball into melted candy using a fork, allowing excess to drip off. Place on the baking sheet.
  8. While the coating is still wet, top each bite with unicorn sprinkles. Repeat for all colors.
  9. Allow coated bites to set completely before serving or storing.
