Delicious and comforting chicken enchiladas wrapped in warm tortillas and topped with melted cheese.

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup diced onions (optional)
  • 1/2 cup sour cream (for serving, optional)
  • Chopped cilantro (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken, half the shredded cheese, and some enchilada sauce. Mix well.
  3. Warm the tortillas in the microwave for about 20 seconds to make them pliable.
  4. Spoon a portion of the chicken mixture onto each tortilla, roll them tightly, and place seam side down in a greased baking dish.
  5. Pour the remaining enchilada sauce over the tortillas and sprinkle with the rest of the cheese.
  6. Bake for about 25 minutes or until the cheese is melted and bubbly.
  7. Serve hot with sour cream on the side and a sprinkle of cilantro on top.
