Delicious Twix Thumbprint Cookies

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon fine salt
  • 20 soft caramels
  • 2 tablespoons heavy cream
  • 1/2 cup chocolate chips
  • 1 teaspoon neutral oil
  • Chopped Twix bars, for topping
  • Flaky sea salt, optional

Instructions

  1. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  2. Cream the butter and sugar until light and fluffy, about 2 minutes.
  3. Mix in the egg yolk and vanilla until smooth.
  4. In a separate bowl, whisk together the flour, cornstarch, and salt, then add to the butter mixture and mix until just combined.
  5. Chill the dough for 20 minutes.
  6. Scoop dough into 1 tablespoon balls and place them on the baking sheets, 2 inches apart. Press a well into each ball.
  7. Bake for 9-11 minutes until edges are set and bottoms are lightly golden.
  8. Press the center again after baking to make larger wells, then cool for 5 minutes before moving to a rack.
  9. Melt caramels with heavy cream in the microwave until smooth and spoonable, then fill the wells of each cookie.
  10. Mix chocolate chips with oil and drizzle over the cookies.
  11. Sprinkle with flaky sea salt if desired. Let set at room temperature or refrigerate for 10 minutes.
