- 1 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 egg yolk
- 1 1/2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 tablespoons cornstarch
- 1/2 teaspoon fine salt
- 20 soft caramels
- 2 tablespoons heavy cream
- 1/2 cup chocolate chips
- 1 teaspoon neutral oil
- Chopped Twix bars, for topping
- Flaky sea salt, optional
- Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
- Cream the butter and sugar until light and fluffy, about 2 minutes.
- Mix in the egg yolk and vanilla until smooth.
- In a separate bowl, whisk together the flour, cornstarch, and salt, then add to the butter mixture and mix until just combined.
- Chill the dough for 20 minutes.
- Scoop dough into 1 tablespoon balls and place them on the baking sheets, 2 inches apart. Press a well into each ball.
- Bake for 9-11 minutes until edges are set and bottoms are lightly golden.
- Press the center again after baking to make larger wells, then cool for 5 minutes before moving to a rack.
- Melt caramels with heavy cream in the microwave until smooth and spoonable, then fill the wells of each cookie.
- Mix chocolate chips with oil and drizzle over the cookies.
- Sprinkle with flaky sea salt if desired. Let set at room temperature or refrigerate for 10 minutes.
