11 oz caramel candies (about 40 pieces)
2 tablespoons heavy cream
1 1/2 cups semi-sweet chocolate chips
1 teaspoon sea salt flakes (optional)
1/2 cup white chocolate chips (for drizzling)
1 cup toasted almonds or cashews (for variation)
12 small pretzels (for pretzel turtles)
Crushed peppermint or sprinkles (for decoration)
Instructions
Preheat the oven to 350°F (177°C). Line a large baking sheet with parchment paper.
Arrange pecans in small clusters of 3–4 halves each on the baking sheet. Toast in the oven for 6–8 minutes until fragrant, then let cool slightly.
In a microwave-safe bowl, combine caramel candies and heavy cream. Microwave in 20-second intervals, stirring after each, until melted and smooth.
Spoon about 1 teaspoon of melted caramel over each pecan cluster. Work quickly before the caramel begins to harden.
In another bowl, melt chocolate chips in 20-second intervals, stirring until smooth and glossy.
Spoon 1 teaspoon of melted chocolate over each caramel layer, covering it completely. Sprinkle with sea salt flakes if desired.
Place the baking sheet in the refrigerator for 20–30 minutes to let the candies set completely.
Once firm, remove from parchment and store in an airtight container. Enjoy chilled or at room temperature!
