This Triple Berry French Toast Casserole is a delicious make-ahead breakfast bake loaded with strawberries, blueberries, and raspberries. Perfect for holidays or weekend brunches, it’s soft, custardy, and topped with a sweet streusel for added crunch.

  • 1 loaf (about 14 oz) French bread, cut into 1-inch cubes
  • 1 cup strawberries, sliced
  • 1 cup raspberries
  • 1 cup blueberries
  • 8 large eggs
  • 2 1/4 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest (optional)
  • Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed
  • Powdered sugar for serving (optional)
  • Maple syrup for serving (optional)

Instructions

  1. Lightly grease a 9×13 inch baking dish and set aside.
  2. Place half of the bread cubes into the prepared dish. Top with half of the mixed berries. Repeat with remaining bread and berries.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar, vanilla, cinnamon, salt, and lemon zest until well combined.
  4. Pour the egg mixture evenly over the bread and berries in the baking dish. Gently press down the bread to ensure all pieces are soaked.
  5. Cover tightly with plastic wrap or foil and refrigerate for at least 3 hours or overnight.
  6. Preheat the oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature while the oven preheats.
  7. Prepare the streusel topping by combining flour, brown sugar, and cinnamon in a bowl. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  8. Sprinkle the streusel evenly over the casserole.
  9. Bake uncovered for 45-55 minutes or until golden brown and cooked through.
  10. Let the casserole cool for a few minutes before serving. Top with powdered sugar and maple syrup if desired.
